Salmon Fishcakes (GF/DF)



Makes approx. 6 medium patties


Ingredients: 1 egg 210g tinned salmon Half small onion, finely chopped 2 cups crushed rice crispy cereal* Olive oil, for cooking ¼ tsp salt ¼ tsp mixed herbs 1 garlic clove, crushed *Or breadcrumbs if gluten isn’t an issue Thanks to www.smarttereachday.com for this fabulous recipe which is a firm favourite with the whole family in our house. An easy and nutritious dinner for everyone.


Method:

1. Drain the salmon and flake in a bowl

2. Lightly scramble the egg (I pop it in the microwave for 30 secs for ease), add to the salmon and mix with a fork

3. Stir in crushed cereal (or breadcrumbs), onion, salt, herbs and crushed garlic

4. Use clean hands (slightly damp) to form into patties

5. Generously pour olive oil into the bottom of a large frying pan and when hot, pop in the patties and cook for 5 minutes on each side

6. Serve with fresh lemon, large salad or green vegetables
