Hummus without tahini

I LOVE hummus but after one average attempt at making my own, I didn't try again - until now! I wanted a light dinner and knew I had a tin of chickpeas in the pantry, so off I trotted to Google to find a recipe that didn't have the usual tahini included, as I knew I didn't have that. (It's not a pantry staple, and I prefer simple recipes that I can use on the fly with what I have to hand). I found this one at thewholesomedish.com . And it is absolutely delicious! (So much so that I would suggest making double quantity). Try it with my seed cracker recipe, or some carrot sticks - YUM!!



1 400g tin chickpeas, drained and rinsed

2-4 tbsp water

2 tbsp extra virgin olive oil

1 tbsp lemon juice

1 garlic clove, chopped

3/4 tsp ground cumin

1/4-1/2 tsp salt


1. Add the chickpeas, 2 tbsp water, olive oil, lemon juice, garlic, cumin and 1/4 tsp salt to the food processor.

2. Process until smooth and creamy, adding

additional water if needed, and more salt to taste.

3. Store covered in the fridge - or enjoy straight away!
