Easy Apricot Bliss Balls

Searching for some healthy snacks to make and take on holiday with us, I came across this recipe from www.justamumnz.com . So easy to make (thankfully, as I was running short on time!) and very few ingredients (yes, I had them all in my pantry!).


Give them a go for an alternative 'bring a plate' nibble option, or simply to have to hand at home. (As a side note: I used the Ceres Organics Sundried Apricots which are brown in colour, but use whatever is available)


Makes 14-18 depending on size

Ingredients

1 cup dried apricots

1 cup boiling water

1 cup dessicated coconut

2 tbsp freshly squeezed orange juice

Small amount of coconut for rolling




Method:


1. Add apricots and boiling water together in a small bowl and set aside for at least 5 minutes

2. Drain well, discard the water and add apricots to a food mixer or chop finely

3. Add the orange juice and coconut to chopped apricots and mix well until combined. It should come together and be sticky enough to roll into balls, however you may need to add a little more orange juice

4. Take a teaspoon sized amount and roll into a ball, then roll the bliss ball in coconut

5. Repeat with remaining mixture, then pop the balls in the freezer for 20 minutes to set

6. Store in the fridge in an airtight container
